In Early October the olives are hand harvested at their peak, still green. while this limits the yield of the oil it vastly imporves the quality of the oil. Gianfranco uses this method which was handed down to him from his father and grandfather. Olio Verde is noted for its freshness, exacting flavor, bright green color and defining taste on the palatte.
